Well the user in that batch and trying to access the course will get this error . either user have to leave the batch or you have to delete that batch as it is past batch with past end date OR you need to allow access within batch dates in batch settings .

No,
You have to just make sure if a course have many batches
then all batches(course setting) for course have access.
Ex-
If course1 has two batches batch1 and batch2 then batch1 and batch2 have enable access for course1
Ok. If only one bacth has access, if I delete the previous one, do I lose all the students' stats?

User course stats will not be deleted when you delete a group, only
group related data will be delete.
