The problem is that when my instructors register their first and last name is not saved.

I checked your website and found out that you have a first name field and a last name field but you have removed the name field from the buddypress user field.
Please try adding the default name field again in your user fields and make it the default primary field.

P.S.: I don’t recall deleting the default buddypress Name field, I think I simply renamed it into First Name and this is when it stopped saving data

I replicated this issue, the issue is coming due to skip email verification setting.
To resolve this you can disable the setting to skip the activation email so that the activation email is sent and the user activates the account then the name will be synced.
Or you can simply edit your profile from front end and save the changes, this will also sync the name with the wordpress first name and last name fields.
Great! I think that was the problem! So strange! Anyway, I have another question: how do I redirect users to a specific page after they clicked the activation link in the email? Is it possible? I couldn't find it anywhere in the settings.
