    My developers and I want to change the permalink structure to allow blog posts to be filtered by category. We've successfully done this on a staging site, but I think I remember reading that WPLMS required a specific permalink structure in order to work properly. Is that right?

    Yes the permalinks are recommended to be remain on the postname only in wplms .But if they are on your test site then it should work on your live site also .
