Hi is there any role between admin and instructor? I mean this role can see all instructor and course statics but cant see admin area.

The code in the tip that you referred is different there the capability of the custom role is only to "read" you need to give more capabilities accordingly. But you don't need it as there is already a user role of "editor" she has more capabilities then the instructor but less than admin.

Sorry but How can editor see all course stats? Because all course's instructor is different.

Well you can use wplms batches plugin for this functionality . Wplms batches uses group that has a moderator user role who can only see the course stats of a batch .
