The certificate is pulling the name of the Administrator/Keymaster in the [certificate_student_name] field, irrespective of who is logged in and viewing the certificate.
The option to print the certificate is not showing, even though the "Enable Print & PDF" setting has been switched to "Show" in the certificate settings.

It is very strange as you're saying. please share your page URL and wp-admin credentials so that we can replicate the bug and will provide you better solutions asap.
Please make sure while providing credentials it must be in private reply.

It looks like it's displaying the author of the course it's associated with as the default name.

Ok I looked into it .,
You have added the certificate preview option in course details widget which shows the course creator's name there .It is just for preview purposes ,
If you want to see your actual certificate, please make sure it is assign to you and you can see it in your profile section.

The problem I have now is that when I try to save to pdf, the certificate is cut off. How do I ensure that it downloads a landscape pdf? Or is there an optimal resolution I must set on the certificate template?

I have checked for your issue and I found that may be this cut off issue is because after generating certificate you opened it on smaller screen that's why it was cut off. Currently I have solved it. but for next time please follow this tip :
