How to allow some users to access the courses only on specific days and specific hours?

You can try the drip feed feature for this : https://wplms.io/support/knowledge-base/apply-drip-feed-based-on-duration-of-unit/ You can also set unit start date time in course : https://wplms.io/support/knowledge-base/enabling-unit-start-date-and-time-in-course-drip-feed/
